Yes, it’s that time of the year again. Some find Christmas time stressful, but it doesn’t have to be that way: after all, it is a holiday, and we all have to make the best of our free time. In our case, free time represents an opportunity to set up lavish, hearty meals that do not make the cut on our regular schedules. And when free time meets Christmas time, we can only think of one thing: barbecue! Here’s our list of ideas for this year’s Christmas’ Barbie:
 
 
1. The slow cooker’s challenge. Beef brisket has been the leading barbecue star in the recent years. For us, barbecued brisket means two things: plenty of time to chit chat while the meat cooks and a taste of heaven when it’s finally done. It takes time to achieve a perfect brisket, and even more time to forget the exquisite experience that is eating it.
 
 
2. Tradition, revisited. Cooking is a form of art that does not despise the past; in fact, it often looks back well into the past to twist the current state of things. To illustrate this point we’ll take the ham example; utterly popular a hundred years ago, but rarely seen these days. Ham, as it happens, can be barbecued in creative, amazing ways.
 
 
3. Unbelievable entrées. When it comes to barbecuing, prawns are the opposite large cuts of meat (like brisket, or lamb). Prawns take very little time, and can be done in many different ways with the same result: deliciousness.
 
 
4. Chicken that doesn’t taste like chicken. Well, it actually does, but flavor is so enhanced that it could easily carry a different name. The secret, as usual, lies in the sauce used to marinate the chook before throwing it on the barbie. So many skewer possibilities here.
 
 
5. The rise of veggie kingdom. Not too long ago, vegetables and barbecues used to be like oil and water: not to be mixed. Luckily, things have changed and, moreover, evolved. Thanks to the internet, recipes that used to be secrets are widely available now. An example: this Mexican Street Corn recipe. Trust us when we say that you must try this.
 
 
6. Want it fast and furiously good? Make a skewer of it. Skewers are great if you’re serving a lot of people. They come out fast and offer a wide array of 
possibilities. Beef, lamb, pork, chicken, veggies, mushrooms and more; most ingredients fit the skewer tactic.
 
 
7. If you’re really good at something, stick to what you know. This is a cooker’s rule of thumb. If your thing is roasted lamb and you’re sure about your 
skills when it comes to it, go for it. If people is expecting your ‘Christmas special’, they’ll be happy to see it. If they aren’t, they’ll be knocked out of their feet.
