Weekend Recipe: Maggie’s Hamburger:

The perfect weekend food: a wonderful Aussie hamburger!

Try this deliciously authentic hamburger from Maggie Beer including some of Maggie's online shop ingredients such as Vino Cotto, extra virgin olive oil and Cabernet Sauce.

Serves 4

Ingredients

Caramelised Onions

1 large brown onion sliced thickly

20g unsalted butter

1 tablespoon brown sugar

1 tablespoon Vino Cotto

Patties

500g chuck steak minced (reduced fat)

salt flakes to taste

1 clove garlic chopped

1 shallot finely chopped

1/2 cup flat leaf parsley chopped

1 tablespoon lemon thyme chopped

freshly ground black pepper to taste

30ml extra virgin olive oil

20g butter

To get it together 

15ml extra virgin olive oil

i rachers bacon trimmed

4 sesame burge buns grilled both sides

20g mayonnaise

1/4 iceberg lettuce

4 slices tinned beetroot

21/2 tablespoons Cabernet Sauce

Method

1.  Slice the onions and fry slowly in a frying pan with the butter, adding sugar to help the caramelisation. When it has cooked down and caramelised to a lovely rich golden brown, add a spash of Vino Cotto. This will store in the fridge.

2. For the patties - salt the meat. Mix mince, garlic, shallot, parsely and lemon thyme together using hands to combine well, slapping the mixture until it sticks together. Cook a little bit of the mixture off in a frying pan to check for seasoning, adding a little more if necessary.

3.  Divide the mixture into 4 and use your hands to form even sized patties about 2-3cm thick. Heat a little EVOO in a large frying pan, add a little butter and cook the patties on a griddle pan or BBQ for 5 minutes a side for rare, or over a gentle heat for 6-8 minutes turnign once.

4.  Remove from the pan and allow to rest for 5 minutes. Meanwhile, wipe the pan out with kitchen paper and add a little more EVOO and cook the bacon over a medium high heat until crispy. Drain on kitchen paper and set aside until needed.

5.  Toast the inside of the buns. Once toasted, top each bun base with mayonnaise, a patty topped with bacon, sliced beetroot, onion, shredded lettuce and finish off with Cabernet Sauce. 

6.  Serve immediately.
