Oats are some of the healthiest grains, they’re a great source of important vitamins, minerals and fibre, and antioxidants; making this the perfect meal to get mum through her special day!
- 1 banana
- 300 ml coconut milk
- 3 g vanilla extract
- 25 g desiccated coconut
- 50 g rolled oats
- 25 g chia seeds
- 130 g honey
Step 1: Blend the banana for 30 to 60 seconds, or until smooth.
Step 2: In a medium bowl, stir together the oats, coconut milk, vanilla extract, mashed banana, and desiccated coconut.
Step 3: Add the honey and mix until combined.
Step 4: Transfer the mixture to an airtight container and refrigerate.
Step 5: Garnish with season fruit and berries – our favourites are strawberries, blueberries and extra banana.
