Here in Australia, we are lucky to have fresh and good quality kiwifruit all year round. Kiwifruit is a source of Vitamin C and natural fiber, and antioxidant. It won't go wrong to pair kiwifruit with the all-time-favourite chocolate and make them into muffins. Sounds yum to me.
Preparation Time: 15 minutes
Cooking Time: 20 minutes
2 large Zespri Gold Kiwifruit
½ cup chocolate chips
½ cup sugar
2 cups (250 g) self raising flour
75 g (3 oz) butter or margarine
1 egg, lightly beaten
½ cup (125 ml) milk
Preheat the oven to 190°C (375°F).
Lightly grease 10 muffin cups.
Place the chocolate chips, sugar and sifted four into a bowl.
Melt the butter or margarine and combine with the egg and milk.
Peel the Zespri Gold Kiwifruit.
Cut in 1 cm (1/2 in.) dice. Reserve a little fruit for the top of the muffins.
Add the liquid ingredients and diced fruit to the dry ingredients and combine quickly, until just moistened.
Spoon into the muffin cups and dot with the reserved fruit.
Bake for about 20 minutes.
