This very simple recipe for prawns is something we picked up in Cape Town. It takes about 20 minutes to prepare and 10 minutes to cook. It is a very easy way to cook prawns and the marinade brings out the best in them.

Serves 4

800 g large prawns, with shell, cleaned
2 tablespoons chopped coriander, for serving

For the marinade

1/3 cup dry white wine
1/3 cup olive oil
4 cloves garlic, crushed
sea salt
freshly ground black pepper

Place the prawns in a single layer in a large, oiled baking pan.

Pour over the marinade.

Leave while heating the oven to 220 degrees.

Roast for around 10 minutes or until the prawns are cooked (depends how efficient your oven is).

Stir in the coriander and serve with crusty bread, steamed basmati rice and salad or greens such as beans.
