A yummy recipe by Australian swimmer, Eamon Sullivan
Preparation time: 15 minutes
Cooking time: 10 minutes
100g (2/3 cup) raw macadamias, roughly chopped
1 sheet frozen puff pastry
2/3 cup thickened cream
1/3 cup lemon butter
200g fresh mixed berries, of your choice
Preheat the oven to 200ºC. Place the pastry sheet on a baking tray covered with baking paper, allow to thaw. Pierce in several places with a fork. Bake for 10 minutes or until golden brown. Transfer to a rack to cool.
Beat the cream with an electric mixer until soft peaks form. Add the lemon butter, beat for a few seconds until just combined.
Spread the lemon cream over the cold pastry. Chop the berries, if necessary and sprinkle over the cream. Top with macadamias.
